One thing real quick…

Published by Laura under What's For Dinner?

If you haven’t given this Beef with Cucumber Raita recipe a shot, try it out this week. You (and your family) will be glad you did!

One more thing (that actually makes two things real quick) don’t leave out the mint—it makes the recipe!

As Promised

Published by Laura under Artsy-Crafty

Here is the knitting update you’ve all been waiting for! I am almost finished with the pink felted tote . As soon as I finish knitting the handles I’ll be able to start the finishing touches!

The brown hat is supposed to be a beanie with a visor. I am working on the visor now. I am not certain how it’s going to turn out, but time will tell!

The other hats are baby hats I have knitted. They look cylindrical because of what I had them propped on for their photo shoots–they’re really more rounded. There is one more hat that I didn’t get a picture of. I had a pom on top of it, but I didn’t like it, so I am reworking it.

The two Noni patterns I ordered came in! I can hardly wait to get started knitting those!

Well, since tomorrow is my first day back to work in 10 days (Spring Break), I better go. I need to wrap up my lesson plans. Happy Monday!

Crock Pot Recipe

Published by Laura under What's For Dinner?

Have I been MIA or what?

I have been dreading going back to work on Monday busy today with housework and knitting! I will have knitting pictures to share with y’all soon, but I don’t have any good light for taking pictures at the moment.

What I do have to share is a yummy crock pot recipe! I didn’t measure, so just add ingredients to taste. Go easy on the garlic powder and salt.

frozen chicken breast (still frozen)

rosemary

thyme

garlic powder (very little)

minced onions

salt (very little) & pepper

2 cans Cream of Chicken (or cream of mushroom)

1 c. (or so) of sour cream

white rice (I use Riceland brand, but Producers rice is also grown in Arkansas and would be a good choice.)

Put frozen chicken breasts in Crock Pot. Mix all other ingredients (not including the rice). Pour into Crock Pot over frozen chicken. Cook for 6-8 hours on low. Cook rice according to package instructions about 20 minutes before serving. Enjoy!

I’ll be back tomorrow with knitting pictures!

Knitting One, Planning Two

I am still in the process of knitting this felted tote. I am knitting the largest size, so it is taking some time. I am almost to the point where I add in the novelty yarn, which will add some “excitement” to the project!

I ordered this Noni pattern. I know it will be challenging for me, but I am going to take my time and hopefully do a great job. I think this bag is absolutely beautiful.

I am planning for these oven mittens and potholders to be my next easy project. I love the colorful stripes and the diagonal pattern of these. I may wind up being as addicted to these as I have been to the hats!

Last time I checked, my Barbie house was going on ebay for over $300. That’s insane.

Helicopter Hats - Helicopter = EASY

Well, it’s official. I have successfully learned to knit on double pointed needles. The only thing that is slowing me down now on knitting these hats is running out of yarn. I suppose that just means I can get creative and use different color combinations!

On the top two hats I want to add a little I-cord to the tops as a finisher, but I have to learn to make an I-cord first. I don’t think it will be difficult, it’s just a matter of me taking the time to look it up!

This pattern is available (free) on the Arkansas Children’s Hospital website (Knitting for Noggins/Patterns).

Knitting and Thinking

vest2-32208.jpg

This is the Baby Alpaca Grande Vest I knitted. I used Debbie Bliss Superchunky cashmerino this time. I knitted yesterday until I could hardly take it any longer to get this finished! I am pleased with the result.

This is baby hat #2. I am having fun working with the double pointed needles! I got so carried away, I forgot to change colors for the stripe when I was supposed to, but it’ll be okay! I am knitting this hat with Cotton Classic.

This morning I was driving to run an errand and I was enjoying all of the blossoms on the trees and the bright green leaves I was seeing everywhere! It is so fitting that we remember the death and celebrate the resurrection of Jesus during this season. It is only because of Him that we are able to have a full life and be made new. I also began thinking about how I serve a living God. When I pray to God, I am praying to my Maker, the God of the universe, the same God who gave Noah the faith to build the ark and that saved Rahab’s life both physically and spiritually when the Israelites invaded Jericho–my God is alive. That’s what I’m celebrating this Easter.

The angel said to the women, “Do not be afraid, for I know that you are looking for Jesus who was crucified. He is not here; he has risen, just as he said.” Matthew 28:5

Happy Easter!

Where has this week gone?

It’s been a few days. We simply must get caught up.

1. Most importantly, it is Holy Week. Other than Easter Sunday I am not participating in any formal observance of Holy Week, but I am taking special time this week to think and reflect on Matthew 26-28:15. If you are looking for some special ways to observe Holy Week with your family, go to www.crosswalk.com, click “Most Popular” and then “15 Ways to Observe Holy Week With Your Family” (sorry I couldn’t just link it but it’s not cooperating).

2. For some reason I have always been intimidated by fried chicken. A few years ago I gave it a shot and it didn’t turn out just right, but a few weeks ago, I tried this recipe from Better Homes and Gardens and loved it. I fried chicken again Monday night using the recipe and it was a success again!

3. Today was a big day for my little first graders and me. We went to see the play If You Give a Mouse a Cookie at the Arts Center. The students had a fabulous time at the play and also at the park where we all went to have lunch. There was a merry-go-round on the playground (we don’t have one at our school) and they had so much fun! I am glad I was able to give them the experience of seeing a stage performance. Unfortunately, I did not take a camera (what kind of teacher am I??).

4. I am making breakfast for supper tonight. I guess you could say Richard and I are trying to kick-off Spring Break. I’m making pancakes (from the red/white BHG cookbook) and frying bacon. Richard is frying some eggs. I am sure we’ll wind up watching some of The Office (Netflix).

5. I caved. I have dark blue nail polish on my toes.

4 Days

In exactly 4 days my Spring Break begins, but who’s counting?

Richard and I have a little trip planned, but while I am at home I have some projects in mind I’d like to complete over Spring Break. I am trying to be realistic by acknowledging the fact that although I fully intend to get these things done I will most likely be planted in my chair knitting or reading. I really don’t have a problem with that.

So, here is my list of goals (in no particular order) for Spring Break:

1. Print digital photos and update photo album (I haven’t printed a single picture since July 2007).

2. Finish wedding memory book.

3. Order bridal portraits (I know…I know….. we’ve been married for 9+months!)

4. Re-organize kitchen.

5. Read Split Ends and Same Kind of Different as Me.

6. Complete the 3 knitting projects I have going so I can start a new one. Right now I am knitting a felted bag (this time bigger and a cherry/pink color), a vest (this time in purple), and baby hats (minus the helicopter and in different colors).

2nd-felted-bag-31708.jpg      1st-baby-at-31708.jpg

Surely that is enough to keep me occupied.

Did I mention that Spring Break is only 4 days away?????
